Mexican Wedding Cookies


  • 1 lb. butter, softened
  • 1 C powdered sugar
  • 4 tsp. pure vanilla extract
  • 5 C all-purpose flour
  • ½ tsp. salt
  • 2 C pecans, chopped small


Cream together the butter and sugar.  Add Vanilla. Combine flour and salt.  Add all at once to the butter/sugar mixture.  As it begins to come together, add the pecans and mix until dough is formed, and there is no flour left at the bottom of the bowl. Form into 1”balls and place half an inch apart of a parchment-lined tray(s).  Bake at 350 degrees for about 15 minutes or until the cookies are slightly golden.  Cool completely and store in an airtight container.  Dust cookies generously with powdered sugar to serve.
